Three different types of milk are used in the production
of our cheeses.
BANON tomme is our leading light, originating from a small village
of the same name located in the Western part of the FORCALQUIER
plateau. It is made using non-pasteurised goat's or ewe's milk,
and refined in dry chestnut leaves. But you can also enjoy a
selection of ewe's and goat's cheeses, fresh or dry tomme, the
bulwark of our region's gastronomic heritage. Also try our cheeses
made with cow's milk. Ubaye tomme and the génépi
flavoured variety are our best-known ambassadors.
