The climate and soils in the Alpes de Haute-Provence make it
an ideal area for growing durum wheat (for making pasta) and
spelt wheat, a cereal with ancient origins.
Spelt wheat soup is delicious. Certain bakers have perpetuated
traditions over the generations, and invite you to try their
specialities such as olive bread, nut bread, country bread,
and the "fougasses": savoury pastries with fillings
made of all sorts of Haute-Provence foods : tomatoes, bacon,
olives, etc.
